Over the past year, fruity cakes have inspired people’s bakes more than ever, popping up on TikTok with viral success; an easy, satisfying way to transform the humble cake into a sure showstopper. It couldn’t be simpler, choose your favourite fruity pud, then use its key elements to build your dream cake. At Cutter & Squidge, we’ve transformed plenty of classics - just take our Strawberry Eat-On Mess Cake, Blueberry Lemon Cheesecake and plenty more - and now you can try making some of these takes on cult classics! Here’s five fruity cake ideas we’re loving right now that you can try at home yourself.

Lemon Meringue

Simply make a zesty layer of lemon curd and vanilla buttercream between vanilla sponges, then top with your vanilla buttercream, break up meringues and decorate with lemon zest, and little shards of biscuits. Who can resist that? And, if you’re feeling fancy, add a swirl of lemon curd in the middle of your cake. A bit like our Lemon Drizzle Cake, but with a unique twist!

A Classic Trifle

We baked this fruity cake idea up for our Christmas collection and it was loved by SO many of you. Is a trifle modern? No. But in a cake, it delivers a moreish marriage of flavour. Combine custard and buttercream, then layer in with a jam of your choice. Top with the custard buttercream, fresh seasonal fruit - and voila, you have a gorgeous berry cake.

Strawberry Cheesecake

A delightful take on cupcakes that in the words of Marie Kondo, will spark joy with every bite. First, chop some fresh strawberries into small chunks and macerate with a small amount of sugar. Leave for 30 minutes or so and then combine with a simple cream cheese frosting. Use this fruity creation to decorate your cupcakes and finish with more fresh strawberries and crumbles of digestive biscuit.

Mango Tirimasu

Whilst it’s not technically a cake, we created our sumptuous layered Yuzu & Mango Tiramisu recipe last summer to take advantage of mangos at their best. Instead of shop bought Victoria fingers, swap in your own sponge layers for an awe inspiring dinner table centrepiece.

Raspberry, With Everything!

As we move into the warmer months, raspberries are popping up in fruity cake recipes all over TikTok and Instagram, and we LOVE it. You can combine a multitude of sponge flavour combinations for this twist, brought to life with a punchy layer of raspberry jam. Homemade is best, of course, but you can also use a high quality jam if you’re short on time. A special mention to @saweeties who’s recipes we have been drooling over most recently, including an almond olive oil cake with raspberry cream and a vanilla cardamom and raspberry cake.
