This cake is made up of two moist layers of lemon sponge sandwiched together with zesty lemon buttercream and fruity mixed berry jam. Topped with lemon buttercream with berry jam swirled in, and finished with colourful crown of edible petals, candied lemon peel and freeze-dried berries. Yum!!

Lemon Sponge: sugar, baking powder, bicarbonate of soda, salt, butter (MILK), lemon essential oil; lemon puree: lemon juice and flesh, sugar; WHEAT flour (GLUTEN), butter (MILK), crème fraiche (MILK), eggs (EGGS); Buttercream: butter (MILK), sugar, rice vinegar: water, rice, salt, acidity; natural vanilla flavouring, condensed milk (MILK); Raspberry Jam: raspberry puree (raspberry, sugar), pectin, citric acid; Strawberry Jam: strawberry puree (strawberry, sugar), pectin, citric acid; Strawberry; Cranberries; Raspberry; Lemon Peel: lemon peel, sucrose, fructose, dextrose, maltose, potassium sorbate, citric acid; Petals.
Shelf Life & Storage
Short shelf life (7 days)
If you're not slicing into your cake straight away, we would advise you to store your cake in the fridge overnight to keep cool and fresh.
When you're ready to tuck in, remove the cake from the fridge and allow it to return to room temperature; this may take approximately 3-4 hours but will depend on the temperature of your room. As soon as the buttercream has a soft, whipped, double cream-like texture, you know it's ready to eat! If you do not allow the cake to return to room temperature the sponge and buttercream will be hard and the flavours may be dulled.

How your cake arrives
The cake is protected with a card collar around the cake and boards on the top and bottom, which is then packed inside a biodegradable bag. This helps remove the cake easily from the tin without anything getting damaged.
