Eton Mess Blondies Recipe

Our Eton mess blondies, inspired by the classic summer dessert, are gooey, fruity and perfectly sweet. Share a squidgy square with loved ones warm from the oven, paired with a dollop of thick clotted cream and some extra strawberry slices. We used our favourite fruit preserve brand, Single Variety Co, in the mix for the perfect swirl of strawberry jam to compliment the sweet meringue filling.

Eton Mess Blondie Recipe

Serving: 6-8 People

 

Ingredients

 

350g unsalted butter

  •  

    450g white chocolate

  •  

    200g white granulated sugar

  •  

    200g light brown soft sugar

  •  

    6 medium eggs

     

    350g plain flour

  •  

    75g meringue

  •  

    8-12 tsp strawberry jam (we use Single Variety Co.)

  •  

    8 chopped medium fresh strawberries (sliced) (save ⅓ for the top)

 


 

Recipe

 

Step 1

 

​​Preheat your oven to 160°C and line a 10 inch square tin with greaseproof paper.

 

 

Step 2

 

Add the unsalted butter and white chocolate to a heatproof bowl and melt in short bursts in the microwave, stirring each time for a smooth mix.

 

 

Step 3

 

Once melted, stir in the white granulated sugar and light brown soft sugar until fully combined. 

 

 

Step 4

 

Add your eggs to the mix and stir again until fully incorporated. 

 

 

Step 5

 

Sift your plain flour into the mix and finally the meringue and fresh strawberry slices and fold together until a batter forms. 

 

 

Step 6

 

Pour the mixture into the prepared baking tin then swirl in your strawberry jam and top with the rest of the chopped strawberries. 

 

 

Step 7

 

Bake for 22-27 minutes, there should be an ever so slight wobble once it's ready. 

 

 

Step 8

 

Leave to cool fully or alternatively slice into squares and serve warm with a dollop of clotted cream and sprinkling of sliced strawberries. Enjoy! 

 


 

Top Tips

 

  • - If the blondie starts to brown too quickly cover it with foil and continue to bake

  •  
  • - If you like your blondies more gooey then bake for 5 minutes less

  •  
  • - These blondies are meant to be chunky but if you want them thinner, use a larger pan
