Banana Bread with a Peanut Butter Frosting

We all fall victim to forgotten bananas every once and a while. Our banana bread with peanut fudge frosting is an ideal home for overripe bananas; super moist, light and naturally sweet, it makes that afternoon brew all the more enticing. And the great news, this one’s vegan too - although you’d never know!

Ingredients

 

For the loaf:

 

  • 150g Light brown sugar
  •  

60g Apple sauce

 

2 tsp Bicarbonate of soda

 

100ml Oil (vegetable, rice, corn, avocado)

 

100ml Dairy free milk (we use oat)

 

40g Lemon juice

 

3 Medium ripe bananas

 

250g Plain flour

 

2 tsp Baking powder

 

 

 

For the frosting:

 

100g Smooth peanut butter


50ml Dairy free milk


150g Icing sugar


Optional dark chocolate flakes

 


 

Recipe

 

Step 1

 

Preheat your oven to 160°C and line a loaf tin with greaseproof paper.

 

 

Step 2

 

Place your bananas in a free standing mixer and roughly mash together. Alternatively, use a good old fashioned mixing bowl, wooden spoon and some elbow grease!

 

 

Step 3

 

Add the sugar and mix vigorously until you have a smooth mixture, some lumps are fine. Then add the apple sauce and mix to combine.

 

 

Step 4

 

In a separate bowl, add the lemon juice to the oat milk to create a vegan buttermilk for a fluffy sponge. Set aside.

 

 

Step 5

 

Add the plain flour, bicarbonate of soda, baking powder and vegan buttermilk to the banana mixture and fold together until ribbons form.

 

 

Step 6

 

Pour your batter into the prepared loaf tin and bake for 40-59 minutes until golden brown and springy, leave to cool.

 

 

Step 7

 

For the frosting, whisk the icing sugar and milk in a bowl until combined. Add the peanut butter and additional milk where necessary to achieve a smooth, spreadable consistency.

 

 

Step 8

 

Spread the frosting evenly over the loaf, add optional dark chocolate flakes and serve.

 


 

Top Tips

 

  • - The riper the better - we recommend bananas with a black skin for the tastiest loaf!

  • - Make sure you don’t overmix the batter to ensure a light, fluffy sponge.

  •  
  • - We love adding chia seeds for an extra health kick and they’re nutty flavour!
