Slice into this cake and it offers up a serve size of 4 or 5 slices each (so order accordingly) and is made up of a moist, moreish sponge sandwiched with zesty lemon buttercream, a fun, fruity raspberry jam and and is finished off with some more lemon buttercream for an extra punch! Not just that, it’s also topped off with freeze dried strawberries and raspberries and sprinkled with some colourful edible petals to stand-out! Serving Size
All of our postable cakes are 6" and serve approx. 5 - 6 slices.
* Please note this cake is small but delicious. It will offer 5-6 slices and is a great option to cater for friends and family needing a wheat free and vegan alternative. For weddings we would recommend this cake alongside a larger cake to ensure all of your guests get to enjoy a yummy slice of cake and celebrate your big day.

Ingredients
Sponge: ground almonds (NUTS), tapioca starch, potato starch, rice flour, chickpea flour, xanthan gum, salt, baking powder, lemon zest, lemon extract, Gluten Free OAT milk; OAT, water, salt, apple puree, vanilla bean paste, lemon juice, caster sugar; Vegan Lemon Buttercream: vegan butter block (palm oil, rapeseed oil, water, salt, emulsifiers (mono- and diglycerides of fatty acids), flavouring, vitamins A and D, colour (carotenes), lemon extract, rice vinegar, icing sugar, golden syrup; Strawberry Raspberry Berry Jam: strawberry, raspberry, sugar, pectin, citric acid; Rose Petals, Freeze-Dried Raspberry, Freeze-Dried Strawberry.
Shelf Life & Storage
Short shelf life (7 days)
If you're not slicing into your cake straight away, we would advise you to store your cake in the fridge overnight to keep cool and fresh.
When you're ready to tuck in, remove the cake from the fridge and allow it to return to room temperature; this may take approximately 3-4 hours but will depend on the temperature of your room. As soon as the buttercream has a soft, whipped, double cream-like texture, you know it's ready to eat! If you do not allow the cake to return to room temperature the sponge and buttercream will be hard and the flavours may be dulled.

How your cake arrives
The cake is protected with a card collar around the cake and boards on the top and bottom, which is then packed inside a biodegradable bag. This helps remove the cake easily from the tin without anything getting damaged.
