Our cinnamon and orange cake is sweet, warming and perfectly light. Paired with a tangy orange cream cheese icing and you’ve got yourself the ideal afternoon slice. We used our favourite butter brand, All Things Butter, in the mix for a perfectly delicate crumb and their NEW Cinnamon butter for the cream cheese icing. Spiced to perfection, the cinnamon was a true star of the show here.
Nestled away in Somerset, All Things Butter have been farming their land since the 1500s, using churning and hand-salting methods that makes their butter so tasty!
Decorating with orange slices adds a lovely freshness to this cake, but for something sweeter, why not try crumbling on our new cinnamon swirl cookie bites - delish!
Ingredients
For the sponge:
- 4 Large eggs
- 250g Soft brown sugar
- 190g Plain flour
- 60g Ground almonds
- 1 tsp Baking powder
- 2 tsp Vanilla bean paste
- Juice of 1 orange
- 200g Unsalted butter (melted)
For the orange icing:
- 125g Cream cheese
- 125g Cinnamon butter
- 1 Orange zest
- 100g Icing sugar
Optional orange slices or our cinnamon swirl cookie bites to make the decoration just a little bit more special when your cake is perfectly baked!
Recipe
Step 1
Preheat your oven to 160°C and line two 8 inch cake tins with greaseproof paper.
Step 2
Grab a large mixing bowl and vigorously whisk your soft brown sugar, vanilla paste and eggs until well combined.
Step 3
Add your cooled, melted butter and juice of 1 orange to the egg mixture and whisk again.
Step 4
Sift your dry ingredients, including your flour, ground almonds and baking powder, into the mix and fold together in a figure of eight motion to form your cake batter.
Step 5
Pour the mixture evenly into your prepared cake tins and bake for 30-40 minutes or until golden brown and springy. Set aside to cool.
Step 6
For the icing, add your cinnamon butter and cream cheese to a bowl and whisk until well combined.
Step 7
Add your orange zest and slowly incorporate the icing sugar in quarters, until you reach your desired consistency and sweetness. You should finish with a lovely smooth, spreadable icing.
Step 8
Decoration time! Sandwich the sponges with the icing and top with icing and optional fresh orange slices or crushed cookie bites and serve.
Top Tips
- We recommend using melted butter for added flavour & quicker mixing time!
- Make sure your ingredients aren't completely chilled when starting, as this will help them combine more smoothly and evenly
- Allow your cake to cool completely before icing, as this will stop it from melting and sliding off!
- Make sure you sift your dry ingredients from a height for a lighter, softer sponge
