For The Cookies

  • 125g unsalted butter
  • 90g caster sugar
  • 90g light brown sugar
  • 1 egg
  • 225g plain flour
  • 10g matcha powder
  • 5g salt
  • 4g baking powder

For The Toppings

  • 60g white chocolate bar (thick kind)
  • 60g fresh raspberries
  1. Melt the unsalted butter and cool completely.

  2. Sieve the plain flour, salted, matcha and baking powder. Add the caster sugar, light brown sugar and stir until evenly distributed.

  3. Add the eggs and cooled melted butter.

  4. Mix until combined evenly. Divide into 6 large balls or 12 equal medium balls and push down a little for the toppings.

  5. Break your white chocolate into chunks. Dig 3 large chunks on each cookie and push in 2 fresh raspberries.

  6. Bake in the oven for 14 minutes at 200 degrees C.

These cookies are unbelievably warm and delicious straight out of the oven, but also excellent afternoon treats with tea or coffee. You can use the base of this cookie recipe and add other toppings!
